Banana Chocolate Chip Muffins

For some strange reason, I like to make muffins. Here is a great recipe for Banana Chocolate Chip Muffins that are a hit with my guys. How can you go wrong with bananas and chocolate??

You’ll need:
1 2/3 cups flour
2/3 cup sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
2 tablespoons wheat germ (optional)
3 medium, ripe bananas
3 egg whites
¼ cup oil
¼ cup milk
1 teaspoon vanilla
2 tablespoons ground flaxseed (optional)
1/3 cup mini chocolate chips (or more…)
Some cinnamon sugar for topping

Preheat your oven to 375 and place paper cups into your muffin tins (or spray the tins with cooking spray).

Beat bananas, egg whites, oil, milk, vanilla, and flaxseed until smooth.

In a separate bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, salt, and wheat germ.

Pour the dry ingredients into the wet mixture and stir until the mixture is moistened. Stir in the chocolate chips.

Pour the mixture into muffin tins and top the batter with cinnamon sugar. Bake for 20 minutes, or until golden brown.
