We had our monthly Xccelerate meeting the other day and I had the gals over to my place. I love to have people over so I took the time to serve up some scrumptious goodies.
Blueberry Muffins are a new favorite of mine. They are light and fluffy with a hint of sweetness.
You'll need:
6 tablespoons of butter
3/4 cup of sugar
2 eggs
2 cups of flour
2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of milk
2 teaspoons of vanilla
2 cups of blueberries - fresh or frozen (I used frozen)
Preheat your oven to 375 and either put muffin cups in your muffin tin or grease them up real good - whichever you prefer.
Cream your butter and sugar.
Add eggs and beat well.
Add flour, baking powder, and salt. Beat some more.
Stir in milk and vanilla and mix it only till smooth.
Quickly stir in berries.
Fill your muffin tins 3/4 full. Sprinkle with some cinnamon sugar and bake for 20-25 minutes, or until light brown. You can cool before eating, but slicing one open prematurely and adding a little butter is the best. Just sayin'...
Keeping with the fruit and somewhat light-n-healthy theme, I also made a banana cake. For the record, one slice of this cake is only 150 delightful calories.
You'll need:
3 tablespoons of butter, softened
1 1/2 cups of sugar
2 eggs
3 medium bananas
1/4 cup unsweetened applesauce
1 teaspoon vanilla
2 cups of flour
1 teaspoon baking soda
Preheat your oven to 350.
Beat butter and sugar until crumbly.
Add eggs and beat well.
Add bananas, applesauce, and vanilla. Beat some more.
Stir in flour, baking soda, and salt until just blended.
Pour batter into a baking pan that has been coated with cooking spray.
Bake for 20-25 minutes, or until a toothpick comes out clean...you know the drill!
Once the cake is cooled, you will want to frost it (the best part in my opinion!).
You'll need:
8 ounces of reduced-fat cream cheese
1/3 cup butter, softened
3 cups of confectioners' sugar
2 teaspoons of vanilla
Beat the cheese and butter until light and fluffy. Add the sugar and vanilla and continue to beat until smooth. Frost that cake and treat those taste buds to a party!
