When I am doing my meal planning, I always consider my schedule. I look at what activities are going on and what meetings I have to go to before I decide on what meals to make. I don't want to make something that needs a lot of attention if I don't have the attention to give!
For a quick and easy dinner, try this Beef & Rice dish. It's hard to make this look pretty, but it sure does taste amazing! Serve it with some seasoned green beans and a side of fruit and your family will think you have been cooking all day!
You'll need:
1 pound sirloin, cut into chunks
oil
green pepper
onion
2 1/4 cups water
1 6 ounce package of Uncle Ben's Long Grain and Wild Rice
tomato, diced
Brown your sirloin, green peppers, and onion in oil until the meat is no longer pink. Add water and rice (with the seasoning) and bring to a boil. Reduce heat and cover for 15-20 minutes. Add tomatoes and enjoy!
