That's what I thought...pancakes are universal. There is something for everyone. Like blueberries? Throw 'em in the batter. Prefer chocolate chips? Go ahead - indulge! Are you a banana fan? Top a stack. Nuts? Go for it!
You get the idea. Don't be afraid to experiment with your pancakes.
Now, I know you might be out of your comfort zone a little as you throw caution to the wind, but I want to stretch you even more. I am going to suggest that you ditch your pancake mix.
That's right. You heard me. I don't want you to spend money on pancake mix. I want you to make your own.
You can do this! Trust me...it's my 17-year old's speciality - and if he can make the fluffiest, most delicious pancakes, so can you.
What you'll need:
1 egg
1 cup flour
1 cup milk
2 tablespoons oil
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
chocolate chips, fruit, nuts...whatever you like
Beat the egg and add in the rest of the ingredients. Mix until smooth. Spoon onto hot griddle and enjoy!
